I made a rollercoaster on my plot with a few friends, but no one can ride it without being trusted to the plot. Is it possible to let people ride our rollercoaster without adding them>

You would need to trust them to the plot to be able to ride the coaster.

Yes you have to add them in order for them to interact with anything on the plot.
