Is there some kind of list of the survival server commands?

Nope, just ask the staff that are on the server. However, some helpful commands are:
/protection
/dparty
/warp
/home
/sethome

Just to name a few ^

How does creative work on the survival server as a donator? Can't you just create stuff and sell it ruining the economy?

You can only place items in creative, which don't drop if they're broken.
Also your creative inventory is seperate from your survival inventory so you can't cheat in items.
