So after playing on the server a bit I have come to realize that there is a problem with a simple solution.
If you have Luckymining on a pickaxe, and then mine for a while, you come up with the problem of having stuff that you can't sell, be it diamonds and emeralds in the lower ranks, or redstone, gold and iron in the higher ones. There is also the problem of the lapis, of which there is no way to get rid of in a profitable manner.
My solution to this is to have a mines "sell all" villager still accept material for the latest price that was available last. This way you won't have to go to each separate mine to sell your excess items, and luckymining is still a nice enchant.
For lapis, it would be nice if there was a way to sell it, even if it wasn't that much, but it really piles up when you can't
